Dear Nick, I was born in the amazon of peru over 65 years ago, I am a teacher of anthropology, much of which I have learned growing up in the jungle, but how amazing it is to see such work of yours, in all my years, and all of the professors I have met, none have ever concentrated of the history of food in the amazon, you give great honor to the tribes and the people of my blessed Loreto in the peruvian amazon. I had a wonderful time looking at the pictures of your top 10 expedition recipes! Nearly got a sick stomach as well... Thank-you for putting this on a website!
I am looking for the recipe for juanes (as well as the symbolism behind each ingredient), so seeing a picture of what they are supposed to look like really helps. Thanks again!
